The Blue Ginger (or Black Ginger) may have an unassuming neutral brown exterior, but once you slice into its unique rhizome stem, the flesh reveals a blue-black set of vibrant hue rings. Biting in, your taste buds are met with pungent, earthy spice and camphor-like aromatic notes.Ā
Native to northeastern and central India, Blue Ginger is loved globally and has special significance for tribal pujas (celebrations) around the time of the Indian New Year. The root can be used and grown similarly to its yellow/orange traditional turmeric cousin and bears similar nutritional properties.
